Unbridled doesn’t technically mean anything in Unified Equestrian; there’s no verb form of the word. A bridle is just a loose-fitting piece of ceremonial head clothing, usually more associated with horses than ponies. It’d be about like if you said, “She’s ungloved.” It could mean that she’s not wearing gloves, but not much else. Any other usage comes directly from influence by your human language.

In more recent times there have been variations with reins, called a cross-under, but those aren’t generally for public show. I’ve heard reports that diamond dogs have tried to use the design to control ponies, but with mixed results.

3) No, but from watching a little of the videos you’re talking about; she’s good, but nothing special. Any experienced slayer can do that.

Lancer might take a while longer, but would be a lot more forgiving if you make a mistake or two. Plus you can more easily get into instance runs on a tank than dps. You might also look into warrior as sort of a mid-ground. Faster than a lancer, more survivable than a slayer, plus still being able to queue as a tank. They can be pretty complicated, though.
